Spring Onion curry /gojju

Ingredients:

Coconut - 1/2 cup
mustard ( sasive) - 1 spoon
split peas ( hurigadle) - 1/4 cup
jeera - 1 spoon
corainder leaves
tamarind
Jaggery

Grind together the above ingreditents into a paste.

Put Tarka or Oggaraney ( mustard, oil, curry leaves) and add chopped spring onions and fry them till they are done.

Add the ground mixture and salt and cook for a few minutes.This can be served with Chapathis/rotis/pooris.

Mango Kulfi / Mango Popsicle

Get set ready to enjoy summer with these delicious ,easy to make Mango kulfis!

Ingredients:

Sweet ripe mango slices - 1/2 cup
sugar/molasses -5 tsp ( add more if you prefer a sweeter kulfi)
condensed milk or whole fat milk- 1/4 cup
elaichi - 4 pods
Saffron - 4 strands

Method:

Peel the mango and slice it.
Mix the rest of the ingredients and grind it to a smooth paste.
Pour them into the popsicle moulds ( You can find them at Target )
Freeze for a couple of hours and voila! your kulfi is reay to be relished!!

Orange / Kitthale hannu sasuve

My husband's family are from Heddese, a small beautiful village near Sringeri in karnataka.I have noticed that the folks there are very creative in cooking.They use various combinations of fruits & vegetables and come up with delicious dishes.

Ingredients:
orange ( 2 medium sized peeled oranges)
Coconut ( 1/2 cup)
mustard ( a few seeds for tadka)
oil (1 spoon)
chillies (2 )
salt

Saute chillies in a few drops of oil for 30 seconds. Grind coconut, chillies with adding water.Mix the ground mixture along with the peeled oranges.Add salt to taste.Heat the remaining oil and add mustard seeds and pour it over the mix.This tastes great with plain rice.

Spinach ( Soppu) Sasuve / Raita

Spinach Sasuve Time: 15-30 mins

Ingredients:

spinach (1 cup)
green chilies ( 1-2 depending on taste)
grated coconut ( 1/4 cup)
mustard seeds ( 1/4 spoon)
buttermilk (1 cup)
salt

Method: Wash the spinach leaves thoroughly and sauté it along with chilies for 2 minutes in a shallow pan adding 4-5 drops of water .Grind the spinach & chilies along with coconut,mustard & 1/2 cup buttermilk(do not add water) .Transfer the ground mixture to a bowl and dilute it by adding the remaining buttermilk . Add salt to taste .This can be served with plain rice or any other rice item as a raita. It tastes really yummy and is very easy to prepare as well.
